About us

In Nagoya, once graced by the culture and prestige of the Owari Tokugawa family, SHORYU
by Ukai-tei was born to bring a new chapter of culinary brilliance to this storied city.

Here, where timeless history lingers, we present the Ukai-tei philosophy̶an art of dining
refined since our founding in 1974, crafted to engage all five senses. To this, we add the
delight of the extraordinary, offering an experience that transcends the everyday.

Within an atmosphere infused with elegance and aesthetic sensibility, set against the noble
presence of Nagoya Castle, we invite you to spend an evening touched with grace and
splendor.

Our Cuisine

The signature Ukai Prime Beef steak unites the richness of marbled fat with the deep
savoriness of lean cuts.

Seasonal treasures include wild mushrooms carrying the fragrance of the mountains and the
bounty of Ise and Mikawa Bays, offering the purest gifts of the sea.

Enhanced with touches unique to this region and reimagined through Ukai-tei’s timeless
artistry, these dishes are further enriched with select ingredients from across Japan and the
world̶each plate a feast worthy of the name SHORYU.
